- Step 1: In a medium bowl, whisk together tamari, brown sugar, minced garlic, ground ginger, and rice vinegar to prepare the sauce. Set aside.
- Step 2: Bring a pot of water to a boil and blanch the snow peas for about 5 minutes until bright green and tender. Drain and set aside.
- Step 3: Heat 2 tablespoons olive oil in a large skillet over high heat. Add sliced mushrooms, season with a pinch of salt, and sauté until golden brown and juices release, about 5–7 minutes. Remove and set aside.
- Step 4: In the same skillet, heat remaining 2 tablespoons olive oil over high heat. Add beef slices in batches, avoiding overcrowding. Cook each side for 2 minutes on one side and 1–2 minutes on the other until just cooked through. Remove and set aside.
- Step 5: Return beef, mushrooms, and snow peas to the skillet. Pour in the prepared sauce and toss over high heat for about 1 minute until sauce slightly thickens and coats all ingredients. Cover skillet, turn off heat, and let rest for 2 minutes to meld flavors.
