Ingredients
  

For the Sauce
  • 0.5 cup tamari or low-sodium soy sauce
  • 2 tbsp brown sugar
  • 6 cloves garlic minced
  • 0.5 tsp ground ginger
  • 2 tsp rice vinegar
For the Stir-Fry
  • 1 lb thinly sliced beef sirloin steak strips or flank steak
  • 10 oz mushrooms thinly sliced
  • 10 oz snow peas
  • 4 tbsp olive oil divided for cooking beef and veggies
  • salt to taste

Method
 

  1. Step 1: In a medium bowl, whisk together tamari, brown sugar, minced garlic, ground ginger, and rice vinegar to prepare the sauce. Set aside.
  2. Step 2: Bring a pot of water to a boil and blanch the snow peas for about 5 minutes until bright green and tender. Drain and set aside.
  3. Step 3: Heat 2 tablespoons olive oil in a large skillet over high heat. Add sliced mushrooms, season with a pinch of salt, and sauté until golden brown and juices release, about 5–7 minutes. Remove and set aside.
  4. Step 4: In the same skillet, heat remaining 2 tablespoons olive oil over high heat. Add beef slices in batches, avoiding overcrowding. Cook each side for 2 minutes on one side and 1–2 minutes on the other until just cooked through. Remove and set aside.
  5. Step 5: Return beef, mushrooms, and snow peas to the skillet. Pour in the prepared sauce and toss over high heat for about 1 minute until sauce slightly thickens and coats all ingredients. Cover skillet, turn off heat, and let rest for 2 minutes to meld flavors.
  6. Step 6: Serve hot over steamed rice or noodles. Enjoy your cozy, flavorful stir-fry!

Notes

This stir-fry is perfect for quick weeknight meals and makes great leftovers stored in the fridge up to 3 days. Reheat gently and add a splash of water or broth to keep sauce moist. Feel free to swap beef for chicken or pork, and add other veggies like bell peppers or bok choy for variety.
