Ingredients
  

  • 1.5 lb boneless, skinless chicken breasts or thighs cut into bite-sized pieces
  • 2 tbsp olive oil plus more for the griddle
  • 1 tsp garlic powder
  • 0.5 tsp onion powder
  • 0.5 tsp paprika
  • Salt to taste
  • Black pepper to taste
  • 4 cloves garlic minced
  • 0.25 cup unsalted butter
  • 0.5 cup grated Parmesan cheese
  • 2 tbsp fresh parsley chopped, for garnish
  • Red pepper flakes optional, for heat

Method
 

  1. Step 1: Prepare Griddle and Chicken Fire up your griddle over medium-high heat. While it heats, drizzle on a little olive oil and spread it around. In a bowl, toss the chicken pieces with 2 tablespoons olive oil, garlic powder, onion powder, paprika, salt, and pepper until well coated.
  2. Step 2: Cook the Chicken Spread the seasoned chicken in a single layer on the hot griddle. Cook for 6 to 8 minutes, turning occasionally, until browned on all sides and cooked through (internal temp 165°F / 74°C).
  3. Step 3: Make Garlic Butter Sauce Push the cooked chicken to one side of the griddle. Add the butter to the empty side and let it melt. Add the minced garlic and sauté for 1 to 2 minutes until fragrant.
  4. Step 4: Combine and Finish Push the cooked chicken back into the garlic butter mixture and stir to coat. Turn off the heat or move chicken to a cooler spot. Sprinkle the grated Parmesan cheese over the chicken and toss gently until melted and coated in cheesy goodness.
  5. Step 5: Serve Remove the chicken from the griddle and plate it up. Garnish with fresh chopped parsley and optional red pepper flakes before serving. Enjoy!

Notes

For a full meal, sauté veggies like broccoli or peppers on the griddle alongside the chicken. You can stir in a splash of heavy cream with the garlic butter for a creamier sauce. Store leftovers in an airtight container in the refrigerator for 3-4 days. Reheat on the griddle or a skillet for best texture.
