- Step 1: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Step 2: In a large mixing bowl, beat the softened butter, brown sugar, and granulated sugar together until creamy and well combined.
- Step 3: Add the eggs, bourbon, and vanilla extract to the butter-sugar mixture. Beat until fully incorporated.
- Step 4: In a separate bowl, whisk together the flour, baking soda, and salt.
- Step 5: Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Step 6: Gently fold in the crumbled bacon and chocolate chunks until evenly distributed throughout the dough.
- Step 7: Using a cookie scoop or tablespoon, drop rounded balls of dough onto the prepared baking sheet, leaving space between each cookie as they will spread.
- Step 8: If desired, sprinkle a pinch of sea salt on top of each cookie dough ball.
- Step 9: Bake in the preheated oven for 10-12 minutes, or until the edges are golden brown.
- Step 10: Remove from the oven and let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
Notes
These cookies are best enjoyed fresh, but you can store them in an airtight container at room temperature for up to a week. If you want to keep them longer, freeze the baked cookies in a zip-top bag for up to three months. Just let them thaw at room temperature before enjoying again.
