Method
- Step 1: Preheat your oven to 350°F (175°C) and grease and flour a Bundt pan.
- Step 2: In a medium bowl, whisk together the flour, baking powder, baking soda, cinnamon, and salt. Set this mixture aside for later.
- Step 3: In a large mixing bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.
- Step 4: Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract and applesauce until everything is combined.
- Step 5: Gradually add the dry ingredients to the wet mixture, mixing until just combined. Fold in the diced apples gently.
- Step 6: Pour the batter into the prepared Bundt pan and smooth the top. Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
- Step 7: While the cake bakes, prepare the glaze. In a small saucepan, combine brown sugar, butter, and heavy cream. Cook over medium heat, stirring until it comes to a boil. Let it boil for 1 minute before removing from heat and stirring in the vanilla extract.
- Step 8: Once the cake is done baking, let it cool in the pan for 10 minutes before inverting it onto a wire rack. Drizzle the warm glaze over the cake before serving.
