- Step 1: In a small bowl, combine the softened butter, garlic powder, and dried parsley. Mix with a fork or small spatula until well blended.
- Step 2: Spread the garlic butter mixture evenly on one side of each of the four slices of bread, covering edge to edge.
- Step 3: Place two slices of bread into a large skillet, buttered-side down. Sprinkle the cheese blend generously over these two slices. Top each with the remaining two bread slices, buttered-side up.
- Step 4: Turn the skillet on over low heat. Cook for about 4-5 minutes, or until the bottom side is golden brown and crispy. Peek underneath with a spatula to check.
- Step 5: Carefully slide a spatula under each sandwich and flip it over. Cook for another 4-5 minutes on the second side, until golden brown and the cheese inside is completely melted and gooey. You can gently press the sandwich with the spatula if needed.
- Step 6: Once both sides are golden and crispy, and the cheese is oozing, remove the sandwiches from the skillet. Place on a cutting board, slice in half (diagonally recommended), and serve immediately.

Substitutions & Additions: Try different cheeses like Provolone, Monterey Jack, Gruyere, or Parmesan. Mix in fresh minced chives, dried oregano, Italian seasoning, or red pepper flakes into the garlic butter. Add a thin slice of ripe tomato, cooked crumbled bacon, or thinly sliced ham inside before grilling.
Tips for Success: Ensure butter is softened to spread easily. Use low heat and be patient for the bread to toast slowly while the cheese melts. Do not overcrowd the pan; cook only as many sandwiches as fit comfortably. You can make the garlic butter mixture ahead of time and store it in the fridge, letting it soften before use.
