- Step 1: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Step 2: In a medium bowl, whisk together the flour, baking powder, baking soda, salt, and ground cinnamon. Set this aside for later.
- Step 3: In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
- Step 4: Beat in the egg and vanilla extract until well combined.
- Step 5: Gradually add the dry ingredients to the wet mixture, mixing until just combined.
- Step 6: In a separate bowl, beat the softened cream cheese, powdered sugar, and milk until smooth and creamy.
- Step 7: Fold in the chopped pecans or walnuts, if using.
- Step 8: Scoop out a tablespoon of cookie dough, flatten it slightly, and place a small dollop of the cream cheese mixture in the center. Fold the dough around the filling to seal it.
- Step 9: Place the filled cookie dough balls on the prepared baking sheet, spacing them about 2 inches apart.
- Step 10: Bake for 10-12 minutes or until the edges are lightly golden. Let them cool on the baking sheet for a few minutes before transferring to a wire rack.
