- Step 1: Slice the oranges into ¼-inch rounds using a sharp knife or mandoline for even thickness.
- Step 2: In a saucepan, combine sugar and water. Heat over medium heat, stirring until sugar dissolves and syrup boils.
- Step 3: Reduce heat to a gentle simmer. Lay orange slices in a single layer in the syrup; simmer gently for 45 to 60 minutes until peel is translucent and tender, turning occasionally.
- Step 4: Use tongs to remove the orange slices and place them on a wire rack. Leave uncovered at room temperature to dry for 24 to 48 hours until tacky but set.
- Step 5 (Optional): For a frosted look, roll dried slices in sugar or dip edges in melted chocolate and sprinkle with flaky salt for an elegant twist.
Notes
This candy requires patience for the drying step which sets the candy and improves texture and shelf life. Store in an airtight container at room temperature for up to two weeks, or refrigerate if dipped in chocolate.
