- Step 1: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Step 2: In a medium bowl, whisk together the flour, baking powder, baking soda, salt, and ground cinnamon. Set this aside.
- Step 3: In a large mixing bowl, cream the softened butter and granulated sugar together until light and fluffy, about 2-3 minutes.
- Step 4: Beat in the egg and vanilla extract until well combined.
- Step 5: Gradually add the dry ingredient mixture to the wet ingredients, mixing until just combined. Be careful not to overmix!
- Step 6: Scoop out tablespoon-sized portions of dough and roll them into balls. Place them on the prepared baking sheet, leaving some space in between each cookie.
- Step 7: Bake in the preheated oven for 10-12 minutes or until the edges are lightly golden. Once done, let them cool on the baking sheet for a few minutes.
- Step 8: In a small bowl, combine the granulated sugar and ground cinnamon. Roll each warm cookie in this mixture until fully coated.
- Step 9: In another medium bowl, beat together the softened cream cheese and butter until smooth and creamy. Gradually add in the powdered sugar, vanilla extract, and ground cinnamon, mixing until everything is well blended.
- Step 10: Once the cookies are completely cooled, use a piping bag or a spatula to spread that luscious cinnamon cream cheese frosting on top.
- Step 11: Enjoy your cozy thick churro cookies with a delicious cinnamon cream cheese frosting!
