Ingredients

  • 16 large white mushrooms stems removed
  • 8 oz crab meat lump or claw, drained and flaked
  • 4 oz cream cheese softened
  • 0.25 cup grated Parmesan cheese
  • 2 tbsp breadcrumbs optional
  • 1 clove garlic minced
  • 1 tbsp fresh parsley chopped, plus more for garnish
  • 0.5 tsp Old Bay seasoning or paprika optional
  • salt and black pepper to taste
  • olive oil for brushing mushrooms

Equipment

  • Oven
  • Baking Sheet
  • Medium bowl

Method

  1. Step 1: Preheat oven to 375°F (190°C).
  2. Step 2: Gently wipe mushrooms clean with a damp paper towel. Lightly brush the outside of each cap with olive oil and arrange them hollow side up on a baking sheet.
  3. Step 3: In a medium bowl, combine softened cream cheese, flaked crab meat, grated Parmesan, breadcrumbs (if using), minced garlic, chopped parsley, and Old Bay seasoning or paprika. Mix gently but thoroughly. Season with salt and pepper to taste.
  4. Step 4: Generously fill each mushroom cap with the crab mixture, creating a small mound on top.
  5. Step 5: Bake for 18–20 minutes, or until the tops are golden brown and the mushrooms are tender and heated through.
  6. Step 6: Carefully remove from oven. Garnish with fresh parsley or extra Parmesan if desired. Serve warm immediately.

Notes

For best results, ensure cream cheese is softened and clean mushrooms with a damp paper towel rather than rinsing. Avoid overstuffing. Prepare components a day ahead if desired. Leftovers store well in an airtight container in the refrigerator for 2-3 days; reheat in a 300°F (150°C) oven for 10-15 minutes. Freezing is not recommended. Customize with different cheeses like Gruyère, add a pinch of red pepper flakes for spice, or incorporate fresh dill or chives for alternative flavors.
