Ingredients
  

  • 4 boneless, skinless chicken breasts
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 3 cloves garlic minced
  • 1 cup chicken broth low-sodium
  • 1/2 cup heavy cream
  • 1/4 cup lemon juice freshly squeezed is ideal
  • 1 teaspoon lemon zest
  • 1/4 cup grated Parmesan cheese optional
  • Fresh parsley chopped, for garnish

Method
 

  1. Step 1: Season chicken breasts generously with salt and pepper. Pat them dry for better browning.
  2. Step 2: Heat olive oil in a large skillet over medium heat. Add chicken and cook for 5-6 minutes per side, until golden brown and cooked through (165°F).
  3. Step 3: Remove chicken and set aside. Add minced garlic to the skillet and sauté for 1 minute, until fragrant.
  4. Step 4: Pour in chicken broth, lemon juice, and lemon zest. Bring to a simmer and cook for 2-3 minutes.
  5. Step 5: Stir in heavy cream and Parmesan cheese (if using). Cook until sauce slightly thickens (1-2 minutes).
  6. Step 6: Return chicken to skillet and simmer in the sauce for a few minutes. Garnish with parsley and serve immediately.

Notes

Use bone-in chicken thighs for extra flavor. Substitute half-and-half or coconut cream for the heavy cream. Add sautéed spinach or mushrooms. A pinch of red pepper flakes adds spice. Meal prep friendly!
