  1. Step 1: Preheat Air Fryer: Preheat your air fryer to 400°F (200°C). This ensures a super crispy outcome from the get-go.
  2. Step 2: Prepare Chickpeas: Drain and rinse canned chickpeas thoroughly under cold water. Pat them completely dry with a paper towel. The drier they are, the crispier they'll get!
  3. Step 3: Season: In a medium bowl, combine the dried chickpeas with olive oil, garlic powder, paprika, salt, and black pepper. Toss well to ensure every chickpea is beautifully coated in the seasoning mix.
  4. Step 4: Air Fry: Place your seasoned chickpeas in a single layer in your air fryer basket. Do not overcrowd; if you have a smaller air fryer, you might need to do this in two batches. Air fry for 15-20 minutes, shaking the basket halfway through cooking to ensure even browning and crisping.
  5. Step 5: Check for Crispiness: After 15-20 minutes, check their crispiness. If not crispy enough, continue air frying for a few more minutes, checking frequently, until they reach your desired crunchy texture. They should feel hard and hollow when tapped.
  6. Step 6: Cool: Let the chickpeas cool for a few minutes before serving. They will get even crispier as they cool down.

Notes

Ensure chickpeas are completely dry after rinsing to prevent steaming. Do not overcrowd the air fryer basket; cook in batches if necessary. Shake the basket halfway through cooking for uniform crispiness. Crispy chickpeas will continue to crisp up as they cool. Store cooled crispy chickpeas in an airtight container at room temperature for 3-4 days. If they soften, re-crisp them in the air fryer at 375°F (190°C) for 3-5 minutes. For variations, add a pinch of cayenne pepper or chili powder for heat, dried herbs like rosemary or thyme, or nutritional yeast for a cheesy flavor. For a sweet treat, toss with coconut oil, cinnamon, and maple syrup or brown sugar. Avocado or grapeseed oil can be used instead of olive oil. Top with a squeeze of lime juice, fresh cilantro, or a dusting of Parmesan cheese after air frying. These make a wonderful, crunchy topping for salads, soups, wraps, or grain bowls.
