- Step 1: Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
- Step 2: Wash and dry the zucchinis. Cut them into thin strips, similar to the size of fries.
- Step 3: In a shallow bowl, combine the breadcrumbs, grated Parmesan cheese, garlic powder, onion powder, dried oregano, salt, and black pepper.
- Step 4: In another shallow bowl, beat the eggs until well combined.
- Step 5: Dip each zucchini strip into the egg mixture, allowing the excess to drip off. Then, coat it in the breadcrumb mixture.
- Step 6: Place the coated zucchini fries on the prepared baking sheet in a single layer.
- Step 7: Lightly spray or drizzle the fries with cooking spray or olive oil.
- Step 8: Bake in the preheated oven for 20-25 minutes, flipping halfway through, until golden brown and crispy.
- Step 9: Remove from the oven and let cool for a few minutes before serving.
