There’s something magical about the crunch of a good fry, isn't there? It brings back memories of summer barbecues and lazy afternoons in the kitchen. Today, I'm excited to share a recipe for Crispy Garlic Parmesan Zucchini Fries that is not only easy to whip up but also packed with flavor!

Ingredients
  

For the Zucchini Fries
  • 2 medium zucchinis Fresh and crisp, they are the star of the show!
  • 1 cup breadcrumbs Preferably panko for that extra crunch.
  • ½ cup grated Parmesan cheese Adds a rich, savory flavor.
  • 2 teaspoons garlic powder For that aromatic punch.
  • 1 teaspoon onion powder Complementing the garlic beautifully.
  • 1 teaspoon dried oregano A hint of herbaceous goodness.
  • ½ teaspoon salt Enhances all the flavors.
  • ¼ teaspoon black pepper Adds a slight kick.
  • 2 large eggs Helps the breadcrumbs stick.
  • 1 tbsp cooking spray or olive oil For baking and achieving that golden crisp.

Method
 

  1. Step 1: Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. Step 2: Wash and dry the zucchinis. Cut them into thin strips, similar to the size of fries.
  3. Step 3: In a shallow bowl, combine the breadcrumbs, grated Parmesan cheese, garlic powder, onion powder, dried oregano, salt, and black pepper.
  4. Step 4: In another shallow bowl, beat the eggs until well combined.
  5. Step 5: Dip each zucchini strip into the egg mixture, allowing the excess to drip off. Then, coat it in the breadcrumb mixture.
  6. Step 6: Place the coated zucchini fries on the prepared baking sheet in a single layer.
  7. Step 7: Lightly spray or drizzle the fries with cooking spray or olive oil.
  8. Step 8: Bake in the preheated oven for 20-25 minutes, flipping halfway through, until golden brown and crispy.
  9. Step 9: Remove from the oven and let cool for a few minutes before serving.

Notes

To store your leftovers, place them in an airtight container in the fridge. They are best enjoyed fresh, but you can keep them for up to 3 days.
