  • 2 medium zucchinis Fresh and vibrant
  • 1 cup grated Parmesan cheese Adds rich flavor

Method
 

  1. Step 1: Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper.
  2. Step 2: Wash the zucchinis and slice them into rounds, about ½ inch thick.
  3. Step 3: In one bowl, beat the eggs. In a second bowl, mix breadcrumbs, Parmesan cheese, garlic powder, onion powder, Italian seasoning, salt, and pepper.
  4. Step 4: Dip each zucchini slice into the beaten eggs, then coat with the breadcrumb mixture.
  5. Step 5: Lightly spray the tops of the zucchini bites with olive oil.
  6. Step 6: Bake for 20-25 minutes, flipping halfway through, until golden brown and crispy.
  7. Step 7: Remove from the oven and let cool slightly. Serve warm with your favorite dipping sauce.
