- Step 1: Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper.
- Step 2: Wash the zucchinis and slice them into rounds, about ½ inch thick.
- Step 3: In one bowl, beat the eggs. In a second bowl, mix breadcrumbs, Parmesan cheese, garlic powder, onion powder, Italian seasoning, salt, and pepper.
- Step 4: Dip each zucchini slice into the beaten eggs, then coat with the breadcrumb mixture.
- Step 5: Lightly spray the tops of the zucchini bites with olive oil.
- Step 6: Bake for 20-25 minutes, flipping halfway through, until golden brown and crispy.
- Step 7: Remove from the oven and let cool slightly. Serve warm with your favorite dipping sauce.

These bites are best enjoyed fresh but can be stored in an airtight container in the fridge for up to 3 days.
