Ingredients
  

For the Sliders
  • 1 lb ground beef 80/20 lean-to-fat ratio
  • 1 tsp salt
  • 1 tsp black pepper
  • 6 slices cheddar cheese for melting on patties
  • 12 count small slider buns Hawaiian rolls recommended
  • 1 cup shredded lettuce
  • 1/2 cup dill pickles sliced
For the Special Sauce
  • 1/2 cup mayonnaise
  • 2 tbsp ketchup
  • 2 tbsp yellow mustard
  • 1 tbsp white vinegar
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp paprika
  • 1 tsp sugar

Method
 

  1. Step 1: Place ground beef in a large bowl. Season evenly with salt and black pepper. Gently mix with hands without overworking. Divide into 12 equal portions and shape each into a small, thin patty matching slider bun size.
  2. Step 2: Heat a griddle or large skillet over medium-high heat. Add patties in a single layer (cook in batches if needed). Cook 3-4 minutes on one side, then flip. During last minute, place a slice of cheddar cheese on each patty. Cover pan with lid to melt cheese and keep patties juicy. Remove when cooked through.
  3. Step 3: While patties cook, mix mayonnaise, ketchup, yellow mustard, white vinegar, garlic powder, onion powder, paprika, and sugar in a small bowl until smooth and combined.
  4. Step 4: Slice slider buns horizontally. Spread a generous spoonful of special sauce on bottom half of each bun.
  5. Step 5: Layer each bun bottom with a cheesy beef patty, followed by shredded lettuce and pickle slices. Top with bun crown and gently press.
  6. Step 6: Serve immediately while warm. Optionally, cover loosely with foil to keep warm before serving.

Notes

Feel free to swap cheddar cheese for American, Swiss, or pepper jack. Use Hawaiian rolls for subtly sweet buns or mini brioche buns for richer texture. Ground turkey or chicken can substitute beef for leaner options. Add hot sauce or pickled jalapeños to the special sauce for a kick. Store leftovers wrapped tightly in fridge up to 2-3 days; reheat in oven for best results.
