Ingredients

  • 3 cups strawberries stems removed and frozen
  • 1/4 cup sugar of choice white sugar, maple syrup, or sugar substitute
  • 2 tsp lemon juice or zest from 1 lemon
  • salt pinch, optional

Equipment

  • High-Speed Blender
  • Tamper Tool (optional, for high-speed blenders)
  • Spatula
  • Airtight container

Method

  1. Step 1: Add the frozen strawberries, sugar, lemon juice or zest, and optional pinch of salt to your high-speed blender.
  2. Step 2: Start blending on low and gradually increase speed. Use the tamper tool to push frozen fruit down towards the blades. Continue blending until the mixture is completely smooth and resembles soft-serve sorbet (usually 30-60 seconds).
  3. Step 3: Scoop immediately into bowls and enjoy your instant sorbet!

Notes

Ensure fruit is truly frozen solid for the best texture. If using a regular blender, allow fruit to thaw slightly first. If the mixture is too thick to blend, add a tiny splash (tablespoon at a time) of liquid (water, juice, or milk). Scrape down the sides of the blender as needed. To store leftovers, transfer to an airtight container. Press parchment paper or plastic wrap onto the surface to prevent ice crystals. Store in the freezer for up to a couple of weeks. Let sit out for 10-20 minutes to soften before scooping from frozen storage.
