- Step 1: Preheat your oven to 350°F (175°C).
- Step 2: In a mixing bowl, combine the diced apples and lemon juice. Toss to coat the apples evenly and set aside.
- Step 3: In a separate bowl, mix together the oats, brown sugar, cinnamon, flour, melted butter, chopped nuts (if using), and a pinch of salt until well combined.
- Step 4: Place the diced apples in a greased muffin tin, filling each cup about halfway.
- Step 5: Spoon the oat mixture over the apples, filling the cups to the top.
- Step 6: Bake in the preheated oven for 20-25 minutes, or until the tops are golden brown and the apples are tender.
- Step 7: Allow to cool for a few minutes before removing from the muffin tin.
- Step 8: Serve warm and enjoy!
Notes
These bites are best enjoyed fresh, but if you have leftovers, store them in an airtight container in the fridge for up to 3 days. Reheat in the microwave for a few seconds to enjoy warm again!
