Ingredients
  

  • 1 pound ground beef lean, or any kind
  • 1 onion chopped
  • 2 cloves garlic minced
  • 1 packet taco seasoning
  • 1/2 cup water
  • 1 can refried beans 16 oz
  • 6 large flour tortillas
  • 1 can enchilada sauce 10 oz, red or green
  • 1 cup salsa mild, medium, or hot
  • 2 cups shredded cheddar cheese
  • 1/2 cup sour cream for serving
  • 1/4 cup fresh cilantro chopped, for garnish

Method
 

  1. Step 1: Preheat oven to 375°F (190°C).
  2. Step 2: In a large skillet over medium heat, cook ground beef, chopped onion, and minced garlic, breaking up the beef with a spoon. Cook until beef is browned and onion is softened. Drain excess grease. Stir in taco seasoning and water, then simmer until all liquid is absorbed.
  3. Step 3: While beef simmers, warm refried beans in a small saucepan over low heat or in a microwave-safe bowl until easy to spread.
  4. Step 4: Lay out tortillas. Spread a thin layer of warm refried beans on each. Spoon a generous amount of seasoned beef mixture over the beans, then sprinkle with shredded cheddar cheese.
  5. Step 5: Carefully roll up each tortilla, folding in the ends to keep filling inside. Place rolled burritos, seam-side down, in a baking dish (or two).
  6. Step 6: In a separate bowl, whisk together enchilada sauce and salsa. Pour generously over the rolled burritos, ensuring they are completely covered. Sprinkle remaining shredded cheese over the top.
  7. Step 7: Bake in the preheated oven for 20-25 minutes, or until cheese is melted, bubbly, and golden brown. Let cool for 1-2 minutes. Garnish with a dollop of sour cream and fresh chopped cilantro. Serve immediately.

Notes

Tips: Do not overfill tortillas, warm them for easier rolling, and ensure beef is well-drained. Place burritos seam-side down and ensure even sauce coverage.
Substitutions: Easily swap ground beef for chicken, turkey, or plant-based options. Add black beans, corn, or bell peppers to the filling. Experiment with different cheeses. For a creamier sauce, whisk in cream cheese or heavy cream.
Storage: Store leftovers in an airtight container in the fridge for 3-4 days. Burritos can also be frozen for up to 2-3 months.
