Easy Creamy Baja Sauce for Tacos, Bowls & Everything!

Ingredients
  

  • 1/2 cup mayonnaise full-fat or light
  • 1/4 cup sour cream or Greek yogurt
  • 1 tbsp fresh lime juice freshly squeezed
  • 1 tsp lime zest finely grated
  • 1 clove garlic minced
  • 1 tsp smoked paprika
  • 1/2 tsp ground cumin
  • 1/4 tsp chili powder
  • salt to taste
  • 1-2 tsp hot sauce optional
  • 1 tbsp finely chopped cilantro optional

Method
 

  1. Step 1: In a medium-sized mixing bowl, add mayonnaise and sour cream or Greek yogurt. Whisk together until smooth.
  2. Step 2: Add the fresh lime juice, lime zest, minced garlic, smoked paprika, cumin, chili powder, and a pinch of salt. Stir everything together until all the spices are fully incorporated. Taste and adjust salt or lime as needed.
  3. Step 3: If using, stir in the hot sauce and gently fold in the finely chopped cilantro.
  4. Step 4: Cover the bowl and refrigerate for at least 15–20 minutes to allow the flavors to meld and the sauce to thicken slightly. Chill time is key for best results.
  5. Step 5: Give the sauce one final stir before serving.

Notes

Substitutions & Additions: Make it spicier with more hot sauce, cayenne, or minced jalapeño. Use dairy-free mayo and yogurt for a dairy-free version. Swap cilantro with parsley or chives. Add a little onion powder for extra savory depth. Tips for Success: Fresh lime and garlic make a noticeable difference. Always taste and adjust seasonings before serving. If too thick after chilling, whisk in a tiny splash of water or milk to reach desired consistency. Storage: Store in an airtight container in the refrigerator for 5-7 days. Stir before each use.
