- Step 1: In a medium-sized bowl, combine the 3/4 cup of warm water and 1 teaspoon of active dry yeast. Stir gently and let it sit for about 5-10 minutes until foamy.
- Step 2: In a large bowl, whisk together the 2 cups of all-purpose flour with a pinch of salt. Create a well in the center and pour the activated yeast mixture into it. Stir until a shaggy, somewhat sticky dough forms.
- Step 3: Lightly flour your countertop. Transfer the dough and knead for 5-7 minutes until it is elastic, smooth, and no longer sticky.
- Step 4: Lightly grease the bowl and place the kneaded dough inside, turning once to coat. Cover and let it rise in a warm place for about 1 hour, or until doubled in size.
- Step 5: Gently punch down the risen dough and transfer it to a lightly floured surface. Use a rolling pin to roll the dough into a large rectangle, about 1/4 inch thick. Cut the dough into roughly 2-inch squares using a sharp knife or pizza cutter.
- Step 6: Place about a tablespoon of shredded mozzarella cheese and 2-3 slices of pepperoni onto the center of each dough square. Optionally, sprinkle a tiny pinch of Italian seasoning over the filling. Fold one corner of the dough over the filling to meet the opposite corner, forming a triangle. Tightly pinch the edges together to seal.
- Step 7: Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper. Carefully place the sealed pizza rolls onto the prepared baking sheet, leaving space between each. Bake for 15-20 minutes, or until golden brown and the cheese is melted and bubbly.
- Step 8: Let the homemade pizza rolls cool for a few minutes after baking. Serve warm with extra marinara sauce for dipping.

Customize with various fillings like other meats, veggies, or cheeses. Don't overfill and ensure edges are tightly sealed. Store leftover baked pizza rolls in an airtight container in the refrigerator for 3-4 days, or freeze for 2-3 months (baked or unbaked). Store-bought pizza dough can be used as a shortcut. For extra crispiness, reheat in an air fryer or under the broiler.
