  • 1/2 cup cold pineapple juice
  • 1 cup rainbow sherbet
  • 1/4 cup coconut cream look for canned or skim from full-fat coconut milk
  • 1/2 cup ice cubes
  • Optional Garnish pineapple wedge, maraschino cherry, umbrella pick

Method
 

  1. Step 1: Scoop the Sherbet: First things first, get that beautiful rainbow sherbet into your blender. Get all those colors in there!
  2. Step 2: Add Liquids and Ice: Pour in the cold pineapple juice, the rich coconut cream, and toss in your ice cubes right on top of the sherbet.
  3. Step 3: Blend Until Smooth: Secure the lid on your blender and blend on high speed. You want to keep going until everything is completely smooth and creamy, with no icy chunks left. It should look thick and luscious! This usually just takes 30-60 seconds depending on your blender.
  4. Step 4: Pour into Chilled Glasses: Grab your favorite glasses. If you have time, popping them in the freezer for a few minutes beforehand makes this drink extra refreshing! Carefully pour the beautiful, swirly mixture into your glasses.
  5. Step 5: Garnish, If Desired: Now for the fun part! Add your pineapple wedge, cherry, umbrella, or whatever makes you happy. Presentation makes everything taste better, right?
  6. Step 6: Serve Immediately: This drink is best enjoyed right away while it's perfectly frosty and creamy. Don't wait!

Notes

Feel free to get creative with substitutions! Try orange, pineapple, or lime sherbet, or a mix of pineapple and orange juice. Mango juice is also a great variation. For a thicker, smoothie-like consistency, add half a frozen banana or a few chunks of frozen mango or pineapple. A tiny pinch of ginger or splash of grenadine can add a twist.
Ensure ingredients are cold for a frosty consistency. Blend thoroughly until smooth, about 30-60 seconds. Adjust consistency by adding more juice if too thick, or ice/sherbet if too thin. Chilling glasses for 10-15 minutes enhances the experience.
This drink is best enjoyed immediately. It will separate and melt quickly if stored.
