- Step 1: Preheat Oven & Prepare Dish: Preheat your oven to 375°F (190°C). Grease a 9x13-inch baking dish with olive oil.
- Step 2: Combine Ingredients: In a large mixing bowl, combine the diced chicken breasts, sliced zucchinis, whole cherry tomatoes, thinly sliced red onion, and minced garlic. Drizzle generously with olive oil. Sprinkle in the dried oregano, dried basil, smoked paprika, salt, black pepper, and optional red pepper flakes. Mix all ingredients thoroughly to ensure everything is coated.
- Step 3: Bake: Spread the mixture evenly in the prepared baking dish. Top with shredded mozzarella and grated Parmesan cheese. Cover the baking dish tightly with aluminum foil. Bake in the preheated oven for 20 minutes.
- Step 4: Brown the Cheese: After 20 minutes, carefully remove the foil from the baking dish. Return the dish to the oven, uncovered, and bake for an additional 10-15 minutes, or until the cheese topping is melted, golden brown, and bubbly.
- Step 5: Garnish and Serve: Once ready, take the dish out of the oven and let it rest for a couple of minutes to let the flavors settle. Before serving hot, sprinkle generously with fresh chopped parsley.

This recipe is highly adaptable. Feel free to swap veggies like bell peppers, mushrooms, or spinach. For protein, consider turkey breast, firm tofu, cod, or snapper (adjust cooking times accordingly). Feta, Provolone, or a Mexican blend can replace mozzarella/Parmesan. Enhance Mediterranean flavors with dried dill, marjoram, a squeeze of fresh lemon, or Kalamata olives. To ensure success, avoid overcrowding the baking dish to ensure roasting, not steaming. Cut chicken and zucchini into similar-sized pieces for even cooking, and pat chicken dry for better browning. This bake is excellent for meal prep; chop ingredients ahead and store for up to 2 days.
