Ingredients
  

  • 1 sheet Puff Pastry thawed but still cold
  • 1 cup Fresh Spinach roughly chopped if leaves are large
  • 1/2 cup Feta Cheese crumbled
  • 1/2 tsp Garlic Powder
  • 1/4 tsp Black Pepper
  • 1 tbsp Olive Oil
  • 1 egg Egg for egg wash

Method
 

  1. Step 1: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Step 2: In a medium bowl, combine the fresh spinach, crumbled feta cheese, garlic powder, black pepper, and olive oil. Stir until well combined and the spinach is just starting to soften a little from the oil.
  3. Step 3: Gently unroll your puff pastry sheet onto a lightly floured surface, working quickly to keep it cold.
  4. Step 4: Evenly spread the spinach and feta mixture over the puff pastry, leaving about a ½-inch border around the edges.
  5. Step 5: Starting from one of the longer sides, carefully but tightly roll up the puff pastry like a savory jelly roll.
  6. Step 6: Using a sharp knife, slice the rolled pastry into 1-inch thick twists.
  7. Step 7: Place the twists onto the prepared baking sheet, ensuring they are spaced apart. In a small bowl, whisk the egg for the egg wash, then brush the tops of each twist.
  8. Step 8: Bake in the preheated oven for 15-20 minutes, or until golden brown and wonderfully puffed.

Notes

Substitutions & Additions: Try goat cheese or shredded mozzarella instead of feta. Enhance with finely chopped sun-dried tomatoes, roasted red peppers, sautéed mushrooms, fresh dill, oregano, or a pinch of red pepper flakes. For a heartier twist, add cooked, crumbled sausage or finely diced cooked chicken.
Tips for Success: Keep puff pastry cold and work quickly. If using fresh or frozen spinach, ensure you squeeze out all excess water to prevent sogginess. Use a sharp knife for clean slices, and avoid overfilling the pastry. The spinach and feta filling can be prepared a day in advance and stored in the fridge.
Storage & Reheating: Store cooled twists in an airtight container at room temperature for up to 1 day, or in the refrigerator for up to 3 days. Baked twists can be frozen for up to 1 month. To reheat, warm in a preheated oven at 350°F (175°C) for 5-10 minutes (or 10-20 minutes from frozen) until crispy. Microwaving is an option but will result in a less crispy texture.
These twists are delicious warm, at room temperature, or even cold, making them great for lunchboxes or picnics. Serve them on their own as a snack or appetizer, or pair with a simple green salad, tomato soup, or as a side to grilled chicken or fish.
