- Step 1: In a bowl, combine the olive oil, lime juice, chipotle chili powder, cumin, garlic powder, onion powder, salt, and pepper. This marinade is where the magic starts!
- Step 2: Place the flank steak in a resealable bag or a shallow dish and pour the marinade over it. Seal or cover and let it marinate in the refrigerator for at least 30 minutes, or up to 2 hours for more flavor.
- Step 3: Preheat your grill to medium-high heat. Remove the flank steak from the marinade and discard the remaining marinade. You want that delicious steak flavor to shine!
- Step 4: Grill the flank steak for about 5-7 minutes on each side for medium-rare, or until your desired doneness is reached. Don’t forget to let it rest for 5 minutes before slicing; this keeps the juices in!
- Step 5: While the steak is resting, grill the sliced bell peppers and onion until they're tender, about 5-7 minutes. This is when your kitchen will start smelling amazing!
- Step 6: To assemble the bowls, place a serving of rice or quinoa at the bottom. Top it with sliced flank steak, the grilled vegetables, and finish with a sprinkle of fresh cilantro and lime wedges. Serve immediately and enjoy!
Notes
If you have leftovers, store them in an airtight container in the fridge for up to 3 days. To reheat, just warm everything in a pan over low heat or in the microwave.
