Method
 

  1. Step 1: Start by preheating your oven to 375°F (190°C). This way, everything will be ready to go when you finish cooking on the stove.
  2. Step 2: Season the chicken breasts generously with salt and pepper.
  3. Step 3: In a large skillet, heat the olive oil over medium heat. Add the chicken breasts and sear them for about 5 minutes on each side until they are golden brown. Remove them from the skillet and set aside.
  4. Step 4: In the same skillet, add the sliced onions. Cook them low and slow until they caramelize, about 15-20 minutes. Stir in the minced garlic and thyme, cooking for an additional minute until fragrant.
  5. Step 5: Pour in the beef broth and balsamic vinegar, scraping up any browned bits from the bottom of the pan. Bring this mixture to a simmer.
  6. Step 6: Return the chicken breasts to the skillet, spooning some of the onion mixture over the top.
  7. Step 7: Sprinkle the shredded Swiss cheese over the chicken.
