Method
- Step 1: Start by preheating your oven to 375°F (190°C). This way, everything will be ready to go when you finish cooking on the stove.
- Step 2: Season the chicken breasts generously with salt and pepper.
- Step 3: In a large skillet, heat the olive oil over medium heat. Add the chicken breasts and sear them for about 5 minutes on each side until they are golden brown. Remove them from the skillet and set aside.
- Step 4: In the same skillet, add the sliced onions. Cook them low and slow until they caramelize, about 15-20 minutes. Stir in the minced garlic and thyme, cooking for an additional minute until fragrant.
- Step 5: Pour in the beef broth and balsamic vinegar, scraping up any browned bits from the bottom of the pan. Bring this mixture to a simmer.
- Step 6: Return the chicken breasts to the skillet, spooning some of the onion mixture over the top.
- Step 7: Sprinkle the shredded Swiss cheese over the chicken.
- Step 8: Transfer the skillet to the oven and bake for 20-25 minutes, or until the chicken is cooked through and the cheese is melted and bubbly.
- Step 9: Before serving, garnish with freshly chopped parsley.
