For the Frito Cowboy Cabbage Skillet
  • 1 medium head cabbage chopped
  • 1 lb ground beef or turkey
  • 1 can black beans 15 oz, drained and rinsed
  • 1 can corn 15 oz, drained
  • 1 can diced tomatoes with green chiles 10 oz
  • 1 packet taco seasoning
  • 2 cups Fritos corn chips
  • 2 cups shredded cheddar cheese

  • green onions
  • jalapeƱos

Method
 

  1. Step 1: In a large skillet over medium heat, brown the ground beef or turkey until fully cooked. Drain excess fat if necessary.
  2. Step 2: Add the chopped cabbage to the skillet and stir until it begins to wilt, about 3-5 minutes.
  3. Step 3: Stir in the black beans, corn, diced tomatoes with green chiles, and taco seasoning. Mix well and cook for an additional 5-7 minutes until heated through.
  4. Step 4: Remove the skillet from heat and sprinkle the Fritos corn chips and shredded cheddar cheese on top.
  5. Step 5: Cover the skillet for a few minutes to allow the cheese to melt.
  6. Step 6: Serve hot, garnished with optional toppings as desired.

Notes

Store leftovers in an airtight container in the fridge for up to 3 days. Reheat in the microwave or on the stovetop until heated through.
