- Step 1: Preheat your oven to 325°F (160°C). Line a standard muffin pan with cupcake liners.
- Step 2: In a food processor, pulse the Oreo cookies into fine crumbs. In a mixing bowl, combine the crushed Oreos and melted butter. Stir until the mixture resembles wet sand. Divide the mixture evenly among the cupcake liners, pressing down firmly to form an even crust.
- Step 3: In a large mixing bowl, beat the softened cream cheese until smooth. Add the granulated sugar and vanilla extract, mixing until well combined. Add the eggs one at a time, beating well after each addition. Mix in the sour cream and flour until the mixture is smooth and creamy.
- Step 4: Spoon the cheesecake filling over the Oreo crusts, filling each liner about 2/3 full. Drizzle a spoonful of chocolate fudge sauce on top of each cheesecake filling. Use a toothpick or a skewer to swirl the fudge into the cheesecake filling.
- Step 5: Bake in the preheated oven for 18-20 minutes, or until the centers are set but still slightly jiggly. Turn off the oven and let the cupcakes sit in the oven for an additional 10 minutes.
- Step 6: Remove the cupcakes from the oven and let them cool in the pan for 10 minutes. Carefully transfer them to a wire rack to cool completely. Once cooled, refrigerate for at least 3 hours or overnight for best results.
- Step 7: Enjoy your fudge swirled Oreo bottom cheesecake cupcakes chilled.
Notes
These cupcakes can be stored in the refrigerator for up to 5 days. They also freeze well for up to 3 months; just thaw them in the fridge before serving.
