Method
- Step 1: Wash grapes thoroughly and pat dry completely to ensure candy coating sticks well.
- Step 2: Skewer each grape onto a toothpick for easy dipping and handling.
- Step 3: In a medium saucepan, combine granulated sugar, light corn syrup, and water. Heat over medium, stirring occasionally until sugar dissolves.
- Step 4: Use a candy thermometer to monitor temperature. When mixture reaches 300°F (hard crack stage), remove from heat immediately.
- Step 5: Stir in vanilla extract gently, then divide candy syrup into separate bowls to add different gel food coloring.
- Step 6: Add blue, purple, and pink gel food coloring to each bowl, stirring to create vibrant, shimmering galaxy colors.
- Step 7: Dip each grape into the colored candy coating, allowing excess to drip off. While still sticky, sprinkle edible glitter or luster dust for a sparkling star effect.
- Step 8: Place coated grapes on parchment paper and let cool completely to harden the candy shell.
Notes
Store Galaxy Grapes in a single layer on parchment paper in an airtight container at room temperature. Avoid refrigeration to maintain the crisp candy shell. Best enjoyed within 1–2 days for optimal crunch and shine.
Try substituting vanilla with almond or peppermint extract, or mixing edible gold or silver luster dust into the candy for extra shimmer. For added texture, sprinkle crushed nuts or star-shaped sprinkles after dipping while the coating is still sticky.
