Ingredients
  

For the Pasta Salad
  • 8 oz pasta your choice, such as rotini or penne
  • 2 cups corn fresh, frozen, or canned
  • 1 unit red bell pepper diced
  • 1/4 cup red onion finely chopped
  • 1/4 cup fresh cilantro chopped
  • 1 unit avocado diced
  • 1/2 cup crumbled feta cheese
  • 1/4 cup Greek yogurt
  • 2 tbsp lime juice
  • 1 tsp chili powder

Method
 

  1. Step 1: Cook the pasta according to package instructions. Drain and set aside to cool.
  2. Step 2: In a large mixing bowl, combine the corn, red bell pepper, red onion, cilantro, avocado, and feta cheese.
  3. Step 3: In a separate small bowl, whisk together the Greek yogurt, lime juice, chili powder, salt, and pepper.
  4. Step 4: Add the cooled pasta to the vegetable mixture and pour the dressing over the top. Toss gently to combine.
  5. Step 5: Serve immediately or refrigerate for 30 minutes to allow the flavors to meld.

Notes

Store any leftovers in an airtight container in the fridge. It will keep well for about 2-3 days.
