Method
- Step 1: Preheat your oven to 400°F (200°C) if you are cooking in the oven. Alternatively, you can also cook these packets on a grill.
- Step 2: Cut large pieces of aluminum foil (about 12x12 inches) for each packet.
- Step 3: In a large bowl, combine the ground beef or turkey, halved baby potatoes, corn, diced bell pepper, diced onion, minced garlic, olive oil, paprika, Italian seasoning, salt, and pepper. Mix everything until well combined.
- Step 4: Place a generous portion of the mixture in the center of each foil piece. Fold the sides of the foil over the mixture and then fold up the ends to create a sealed packet.
- Step 5: Place the foil packets on a baking sheet and bake for about 25-30 minutes, or until the potatoes are tender and the meat is cooked through.
- Step 6: Carefully open the packets (watch out for that steam!) and, if desired, sprinkle shredded cheese on top before serving.
Notes
Leftovers can be stored in an airtight container in the fridge for up to 3 days. You can freeze the packets before cooking.
