Ingredients
  

For the Pickles
  • 4 cups cucumber sliced
  • 2-3 pcs habanero peppers sliced
  • 4 cloves garlic smashed
  • 2 cups distilled white vinegar
  • 1 cup water
  • 1/4 cup sugar
  • 2 tbsp salt
  • 1 tsp black peppercorns
  • 1 tsp mustard seeds
  • 1 tsp dill seeds

Method
 

  1. Step 1: Wash the cucumbers thoroughly and slice them into discs or spears, depending on your preference.
  2. Step 2: In a clean, sterilized jar, layer the cucumber slices, sliced habanero peppers, and smashed garlic cloves.
  3. Step 3: In a saucepan, combine distilled white vinegar, water, sugar, salt, black peppercorns, mustard seeds, and dill seeds. Bring the mixture to a boil over medium heat, stirring until the sugar and salt have dissolved.
  4. Step 4: Carefully pour the hot brine over the packed cucumbers, ensuring they are fully submerged. Leave about half an inch of headspace at the top of the jar.
  5. Step 5: Wipe the rim of the jar with a clean cloth to remove any residue. Seal the jar with a lid.
  6. Step 6: Allow the jar to cool to room temperature before placing it in the refrigerator.
  7. Step 7: Let the pickles sit in the fridge for at least 48 hours to allow the flavors to meld. For the best taste, wait 1-2 weeks before consuming.

Notes

Store your homemade pickles in the refrigerator for up to 2 months. They taste even better as they continue to pickle, so the longer you wait (up to a point), the more flavorful they'll become.
