- Step 1: In a blender, combine the fresh raspberries, honey (or maple syrup), lemon juice, and water. Blend until smooth.
- Step 2: Pour the blended raspberry mixture through a fine-mesh sieve or cheesecloth into a saucepan to remove the seeds. Use a spatula to press the mixture to extract as much juice as possible.
- Step 3: Place the saucepan over medium heat and bring the strained raspberry juice to a gentle simmer.
- Step 4: Gradually whisk in the powdered pectin and salt. Continue to stir until the mixture is well combined and starts to thicken, about 2-3 minutes.
- Step 5: Remove the saucepan from heat. Carefully pour the mixture into silicone gummy molds or a shallow dish.
- Step 6: Allow the gummies to cool at room temperature for about 15 minutes, then transfer to the refrigerator. Let them set for at least 2-3 hours or until fully firm.
- Step 7: Once set, carefully remove the gummies from the molds. Store the gummies in an airtight container in the refrigerator for up to one week.
Notes
Feel free to swap raspberries for other berries like strawberries or blueberries for a different flavor. Add a splash of vanilla extract for added depth.
