- Step 1: Prep your slow cooker by spraying it with cooking spray for easier cleanup.
- Step 2: Toss the cut Gala apple pieces into the slow cooker. Pour in the unsweetened apple juice, then sprinkle in the cinnamon, nutmeg, cloves, and allspice. Give it a gentle stir to ensure everything is evenly coated.
- Step 3: Pop the lid on and set your slow cooker to HIGH. Let it cook for just 1 hour to heat up quickly and start softening the apples.
- Step 4: After the initial hour, turn off your slow cooker. Carefully transfer about one-third of the apple mixture to a food processor. Pulse and blend until it's wonderfully smooth and completely puréed.
- Step 5: Continue this blending process with the remaining apple mixture, working in batches if necessary, until every bit is silky smooth. Once it's all blended, pour it back into the slow cooker.
- Step 6: Cook the apple butter on LOW for 6–8 hours. This is where the flavor deepens, and the mixture reduces by half, concentrating all that deliciousness into a thick, luxurious "butter."
- Step 7: About 15-20 minutes before your apple butter is done, grab a small skillet. Over medium-high heat, combine your maple syrup, unsalted butter, and brown sugar.
- Step 8: Whisk constantly as the caramel mixture heats up. It will start to bubble and thicken, becoming beautifully fragrant. Once it's thick and bubbly, take it off the heat and quickly whisk in the sea salt and cream. Keep whisking for another 1-2 minutes until it's smooth and glossy.
- Step 9: Slowly pour your warm, glistening caramel into the apple butter in the slow cooker. Stir it gently until it's completely incorporated.
- Step 10: Let the salted caramel apple butter cool completely before scooping it into clean, lidded jars. It will thicken even more as it cools, reaching that perfect spreadable consistency.

Tips for Success: Don't peel the apples as their pectin helps thicken the butter naturally and they break down completely when blended. To aid reduction, slightly crack the slow cooker lid during the long cook time to allow steam to escape. Stir occasionally to prevent sticking. Be cautious with the caramel as it can burn quickly; whisk constantly and remove from heat immediately if it darkens too fast.
Substitutions & Additions: Feel free to experiment with other apple varieties like Honeycrisp, Fuji, or a mix with tart Granny Smith. For extra spice, add 1/4 tsp ground ginger or a pinch of cardamom. A splash of vanilla extract or a tiny dash of bourbon can enhance the caramel. Adjust sweetness by slightly reducing brown sugar or maple syrup to taste.
Storage: Store cooled salted caramel apple butter in airtight jars in the refrigerator for up to 3-4 weeks. For longer storage, freeze in freezer-safe containers for up to 6 months, thawing overnight in the fridge before use.
