Ingredients
  

For the Honey Roasted Sweet Potatoes
  • 4 medium sweet potatoes peeled and cut into 1-inch cubes
  • 1/4 cup honey adds perfect sweetness
  • 3 tbsp olive oil helps roast beautifully
  • 1 tsp cinnamon complements sweetness
  • 1/2 tsp salt enhances flavors
  • 1/4 tsp black pepper adds hint of heat
  • 1 tbsp fresh rosemary chopped, optional

Method
 

  1. Step 1: Preheat your oven to 425°F (220°C). This high temperature will help our sweet potatoes caramelize beautifully.
  2. Step 2: In a large bowl, combine the sweet potato cubes with olive oil, honey, cinnamon, salt, and black pepper. Toss until the sweet potatoes are evenly coated.
  3. Step 3: Spread the sweet potatoes in a single layer on a baking sheet lined with parchment paper.
  4. Step 4: Roast in the preheated oven for 25-30 minutes, stirring halfway through, until tender and caramelized.
  5. Step 5: If using, sprinkle chopped rosemary over the sweet potatoes during the last 5 minutes of roasting.
  6. Step 6: Remove from the oven and let cool for a few minutes before serving.

Notes

Store leftovers in an airtight container in the fridge for up to 5 days. Reheat in the oven or microwave. The flavors only get better!
