Method
 

  1. Step 1: Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper for easy cleanup.
  2. Step 2: In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
  3. Step 3: Beat in the egg and vanilla extract until well combined.
  4. Step 4: In a separate bowl, whisk together the flour, baking powder, and salt.
  5. Step 5: Gradually add the dry ingredients to the wet mixture, mixing until just combined.
  6. Step 6: Stir in the pink lemonade concentrate until evenly distributed.
  7. Step 7: Roll the dough into 1-inch balls and place them on the prepared baking sheet, spacing them about 2 inches apart.
  8. Step 8: Using your thumb or the back of a teaspoon, make an indentation in the center of each cookie.
  9. Step 9: Bake for 12-15 minutes, or until the edges are lightly golden.
  10. Step 10: Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack.
