  • pink and blue gel food coloring as needed for coloring

Method
 

  1. Step 1: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Step 2: In a medium bowl, whisk together the flour, baking powder, baking soda, and salt until well combined.
  3. Step 3: In a large bowl, beat the softened butter and granulated sugar together for 2 to 3 minutes until light and fluffy.
  4. Step 4: Beat in the egg, vanilla extract, and buttermilk until smooth.
  5. Step 5: Gradually fold the dry ingredients into the wet mixture, mixing just until combined.
  6. Step 6: Divide the dough into two equal portions. Add pink gel food coloring to one half and blue gel food coloring to the other, folding each until color is even and vibrant.
  7. Step 7: Take small amounts of pink and blue dough and gently roll them together to create a marbled swirl pattern. Form the marbled dough into 1½-inch balls.
  8. Step 8: Place the dough balls onto the prepared baking sheet, spacing a couple of inches apart. Bake for 10 to 12 minutes until edges are lightly golden but centers look slightly underdone.
  9. Step 9: Let cookies cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.

Notes

Make sure not to overmix the dough after adding flour to keep cookies soft. Use gel food coloring for vibrant colors without adding liquid. Chill dough if butter is too soft or kitchen is warm to prevent spreading. Store cookies in an airtight container layered with parchment paper for up to 4-5 days. Refresh softness by microwaving briefly with a cup of water nearby.
