Ingredients

  • 1 lb cooked meatballs frozen or homemade
  • 4 cups mashed potatoes fresh or leftover
  • 1 cup brown gravy homemade or store-bought
  • 1 cup shredded mozzarella or cheddar cheese
  • salt to taste
  • pepper to taste

Equipment

  • 9x13 inch Baking Dish

Method

  1. Step 1: Preheat your oven to 350°F (175°C). Grease a 9x13-inch baking dish.
  2. Step 2: Arrange your cooked meatballs in an even layer at the bottom of your prepared baking dish. Pour the brown gravy all over them.
  3. Step 3: Spoon your mashed potatoes over the meatballs and gravy. Spread them out gently to create a smooth, even top layer. Season generously with salt and pepper to your liking.
  4. Step 4: Evenly sprinkle your shredded mozzarella or cheddar cheese over the mashed potatoes.
  5. Step 5: Pop your dish into the preheated oven for 25-30 minutes. You’re looking for that cheese to be perfectly melted, golden brown, and bubbling excitedly. Once it hits that sweet spot, pull it out and let it cool for just a few minutes before serving.

Notes

Substitutions & Additions: Not a fan of traditional beef meatballs? Try turkey, chicken, or even vegetarian options like lentil or mushroom meatballs. While brown gravy is classic, feel free to swap it for mushroom, rich onion, or creamy chicken gravy. For cheese choices, Colby Jack, Monterey Jack, sharp provolone, or an Italian cheese blend work wonderfully. To sneak in veggies, sauté diced onions, bell peppers, or mushrooms and mix them into the meatball and gravy layer, or add steamed peas or corn before baking. A pinch of red pepper flakes or a dash of hot sauce can give a spicy kick. Fresh parsley, chives, or dried Italian seasoning can elevate flavors. You could even add a thin layer of sautéed or caramelized onions under the meatballs for extra depth!
Tips for Success: Ensure your meatballs are in a single, even layer to allow gravy to coat them well and ensure even heating. Your mashed potatoes should be creamy but not too thin for the best results; if too runny, the bake might be watery, if too stiff, hard to spread. Don't forget to taste and adjust the seasoning for your mashed potatoes and gravy before layering—a little salt and pepper can make all the difference. Using warm ingredients for meatballs, mashed potatoes, and gravy can reduce the baking time. If your cheese is browning too quickly, loosely tent it with aluminum foil. You can assemble the entire bake (without the cheese) and refrigerate it for up to 24 hours; just add the cheese before baking and increase the baking time by about 10-15 minutes, or until heated through and bubbly.
Storage & Reheating: Allow the bake to cool completely, then cover it tightly with plastic wrap or aluminum foil. You can store it in the refrigerator for up to 3-4 days. This dish freezes beautifully! Once cooled, you can either wrap the entire baking dish tightly with plastic wrap and then foil, or portion out individual servings into freezer-safe containers. It will keep in the freezer for up to 2-3 months. Thaw overnight in the refrigerator before reheating. To reheat, simply place covered leftovers in the oven at 300-325°F (150-160°C) until heated through, or microwave individual portions until warm. If reheating from frozen, add extra time.
