For the Cake
  • 1.5 cups grated carrots
  • 1 cup grated zucchini
  • 2 cups all-purpose flour
  • 1.5 tsp baking powder
  • 0.5 tsp baking soda
  • 0.5 tsp salt
  • 1 tsp ground cinnamon
  • 0.5 tsp ground nutmeg
  • 0.5 cup vegetable oil
  • 0.75 cup granulated sugar
  • 0.75 cup brown sugar
  • 3 large eggs
  • 1 tsp vanilla extract
  • 0.5 cup chopped walnuts (optional)
For the Cream Cheese Frosting
  • 8 oz cream cheese softened
  • 0.5 cup unsalted butter softened
  • 1 cup powdered sugar
  • 1 tsp vanilla extract
  • 0.25 cup chopped walnuts for garnish (optional)

Equipment

  • Large bowl
  • Separate bowl
  • 8-inch Round Cake Pans
  • Wire rack
  • Mixing Bowl
  • Whisk
  • Spatula
  • Toothpick
  • Box Grater

Method

  1. Step 1: Prep Your Pans & Preheat: Preheat oven to 350°F (175°C). Grease and flour two 8-inch round cake pans.
  2. Step 2: Whisk the Dry Goodies: In a large bowl, whisk together all-purpose flour, baking powder, baking soda, salt, ground cinnamon, and ground nutmeg until evenly distributed.
  3. Step 3: Mix the Wet Wonders: In a separate bowl, combine vegetable oil, granulated sugar, and brown sugar; beat until well blended. Beat in the eggs one at a time, incorporating each before adding the next. Stir in vanilla extract.
  4. Step 4: Combine Wet & Dry: Gradually add the dry ingredients from the first bowl into the wet ingredients. Mix just until everything is combined, being careful not to overmix.
  5. Step 5: Fold in the Veggies & Nuts: Gently fold in the grated carrots, grated zucchini, and optional chopped walnuts. The zucchini will blend in, leaving only moisture.
  6. Step 6: Bake to Perfection: Divide the batter evenly between the two prepared cake pans. Bake for about 25-30 minutes, or until a toothpick inserted into the center comes out clean.
  7. Step 7: Cool Down: Let cakes cool in their pans for about 10 minutes, then carefully turn them out onto a wire rack to cool completely.
  8. Step 8: Whip Up the Cream Cheese Frosting: While cakes are cooling, beat softened cream cheese and softened butter in a mixing bowl until super smooth and creamy. Gradually add powdered sugar, beating until incorporated and creamy. Finish by beating in vanilla extract.
  9. Step 9: Frost & Garnish: Once cake layers are completely cool, place one layer on a serving plate. Spread a generous layer of frosting on top. Place the second layer on top, then spread the remaining frosting over the top and sides. Garnish with extra chopped walnuts if desired.
  10. Step 10: Slice & Serve: Cut your beautiful Moist Carrot Zucchini Cake into slices and serve immediately.

Notes

Substitutions & Additions: You can experiment with a portion of whole wheat flour or a 1:1 gluten-free baking blend. Unsweetened applesauce can replace some of the oil, or melted butter for a richer flavor. Adjust sugar ratios slightly to preference. Add a pinch of ground ginger or allspice for a more complex spice profile. Pecans are a fantastic substitute for walnuts, or leave nuts out entirely. Fold in ½ cup of golden raisins, dried cranberries, crushed pineapple (well-drained), shredded coconut, or mini chocolate chips for extra bursts of flavor and chewiness.
Tips for Success: Do not overmix the batter once dry ingredients are added; this leads to a tough cake. Grate carrots and zucchini finely for the best texture. Avoid overbaking; pull the cake from the oven once a toothpick inserted into the center comes out clean. Ensure cream cheese and unsalted butter are at room temperature for smooth, lump-free frosting. Let cake layers cool completely before frosting to prevent melting. Measure flour correctly by spooning it into the cup and leveling off. Carrots and zucchini can be grated a day or two in advance, and frosting can be made a day ahead and re-whipped before use.
Storage: Due to the cream cheese frosting, this cake is best not left at room temperature for more than an hour or two. Store any leftover cake in an airtight container in the refrigerator for 3-5 days. Cake layers can be baked ahead, cooled completely, wrapped tightly, and frozen for up to 2-3 months. Individual slices of frosted cake can also be frozen for up to a month after frosting has firmed up on a baking sheet; thaw in the fridge or at room temperature.
