- Step 1: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Step 2: In a large mixing bowl, beat the softened butter and brown sugar together until light and fluffy.
- Step 3: Mix in the molasses and egg until well combined.
- Step 4: In a separate bowl, whisk together the flour, baking soda, cinnamon, ginger, cloves, and salt.
- Step 5: Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Step 6: Using a cookie scoop or tablespoon, drop rounded balls of dough onto the prepared baking sheet, leaving some space between each.
- Step 7: Bake in the preheated oven for 10-12 minutes or until the edges are set and the centers look slightly soft.
- Step 8: Remove from the oven and let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
- Step 9: In a medium bowl, whip the heavy cream until soft peaks form. Add the vanilla extract and powdered sugar, and continue to whip until stiff peaks form.
- Step 10: Once the cookies are completely cool, spread or pipe a generous amount of the whipped cream filling on the bottom of one cookie, then sandwich it with another cookie.
- Step 11: Serve the molasses cream pie cookies immediately or store them in an airtight container in the refrigerator for up to 3 days.

Store cookies in an airtight container in the refrigerator for up to 3 days. For longer storage, wrap well and freeze for up to 2 months.
