Ingredients
  

  • 1 lb lean ground beef
  • 1 cup nacho cheese sauce
  • 0.5 cup sour cream
  • 1 can Rotel diced tomatoes with green chilis, drained well
  • 1 green bell pepper green bell pepper chopped
  • 1 small onion small onion diced
  • 1 packet taco seasoning mix
  • 1 cup crushed Nacho Cheese Doritos
  • 4 wraps large flour tortilla wraps
  • 1 cup shredded lettuce for serving

Method
 

  1. Step 1: Grab your favorite large skillet and set it over medium-high heat. Toss in your lean ground beef and cook it until it's beautifully browned all over. No pink left in sight! Once it's done, make sure to drain off any excess fat.
  2. Step 2: Now, add your diced onions and chopped green bell pepper to the skillet with the cooked beef. Give them a good stir and sauté for about 4 minutes. You want them to soften just slightly, but still retain a little bite.
  3. Step 3: Stir in your trusty packet of taco seasoning mix. Let it simmer for 1–2 minutes, allowing all those wonderful spices to meld with the beef and veggies.
  4. Step 4: In a separate bowl, combine your nacho cheese sauce with the well-drained Rotel. Stir it really well until it's smooth and perfectly combined.
  5. Step 5: Lay your large flour tortillas out on a clean, flat surface. Spread a generous line of your cheese-Rotel mixture right down the center of each tortilla. Pile a good portion of your seasoned beef mixture on top of the cheese. Add a dollop of sour cream, and then sprinkle a handful of those glorious crushed Nacho Cheese Doritos.
  6. Step 6: Carefully fold in the sides of your tortilla, then roll it up tightly from the bottom. Place your wraps seam-side down in a dry skillet over medium heat. Toast each wrap until it's golden brown and wonderfully crispy on both sides, usually 2–3 minutes per side.
  7. Step 7: Slice your wraps in half if you like, and serve them immediately with a side of fresh shredded lettuce. For an extra flourish, consider adding your favorite salsa, guacamole, or a drizzle of extra sour cream.
