Ingredients
  

For the Crust
  • 24 cookies Oreo cookies crushed
  • 5 tbsp unsalted butter melted
For the Filling
  • 16 oz cream cheese softened
  • 1 cup powdered sugar
  • 1 tsp vanilla extract
  • 2 cups whipped topping thawed
Optional Topping
  • Additional Oreo cookies

Method
 

  1. Step 1: In a medium bowl, combine the crushed Oreo cookies and melted butter. Mix until the crumbs are evenly coated.
  2. Step 2: Press the mixture firmly into the bottom of a greased 9x9-inch baking dish to form the crust.
  3. Step 3: In a large mixing bowl, beat the softened cream cheese until smooth. Gradually add the powdered sugar and vanilla extract, mixing until well combined.
  4. Step 4: Gently fold in the whipped topping until the mixture is smooth and creamy.
  5. Step 5: Spread the cheesecake filling evenly over the Oreo crust in the baking dish.
  6. Step 6: Refrigerate for at least 4 hours, or until set.
  7. Step 7: Once set, cut into bars and top with additional crushed Oreo cookies if desired. Serve chilled.

Notes

These bars are best enjoyed fresh, but you can store leftovers in an airtight container in the refrigerator for up to 5 days. If you're planning to make them ahead of time, they freeze beautifully! Just wrap them tightly in plastic wrap and place them in the freezer for up to a month. Thaw in the fridge before serving.
