Method
 

  1. Step 1: Preheat your oven to 425°F (220°C).
  2. Step 2: Wash the zucchinis thoroughly. Cut off the ends, then slice them into rounds or half-moons, about ½ inch thick.
  3. Step 3: In a large bowl, combine the sliced zucchini with olive oil, garlic powder, onion powder, Italian seasoning, salt, and pepper. Toss until evenly coated.
  4. Step 4: Spread the seasoned zucchini in a single layer on a baking sheet.
  5. Step 5: Place the baking sheet in the preheated oven and roast for about 20-25 minutes, stirring halfway through.
  6. Step 6: If using Parmesan cheese, sprinkle it over the zucchini during the last 5 minutes of roasting.
  7. Step 7: Remove from the oven, garnish with fresh parsley if desired, and serve warm.
