- Step 1: Preheat your oven to 425°F (220°C).
- Step 2: Wash the zucchinis thoroughly. Cut off the ends, then slice them into rounds or half-moons, about ½ inch thick.
- Step 3: In a large bowl, combine the sliced zucchini with olive oil, garlic powder, onion powder, Italian seasoning, salt, and pepper. Toss until evenly coated.
- Step 4: Spread the seasoned zucchini in a single layer on a baking sheet.
- Step 5: Place the baking sheet in the preheated oven and roast for about 20-25 minutes, stirring halfway through.
- Step 6: If using Parmesan cheese, sprinkle it over the zucchini during the last 5 minutes of roasting.
- Step 7: Remove from the oven, garnish with fresh parsley if desired, and serve warm.
Notes
Store leftovers in an airtight container in the fridge for about 3-4 days. Reheat in the oven or on a stovetop for best results!
