  • 2 packages Lil' Smokies sausages 14 oz each package
  • 1 cup brown sugar
  • 1 cup pineapple juice
  • 1 cup pineapple chunks fresh or canned
  • 1 tbsp soy sauce
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp black pepper
  • 1/4 tsp cayenne pepper optional

Method
 

  1. Step 1: Whisk together brown sugar, pineapple juice, soy sauce, garlic powder, onion powder, black pepper, and cayenne pepper (if using) in a medium bowl until the brown sugar dissolves and the glaze is well blended.
  2. Step 2: Place both packages of Lil' Smokies sausages into the slow cooker. Pour the pineapple glaze over the sausages and gently stir to coat evenly.
  3. Step 3: Add pineapple chunks to the slow cooker and gently mix to distribute without breaking up the fruit.
  4. Step 4: Cover and cook on low for 4 hours, or on high for 2 hours. Stir every 30 to 45 minutes if possible to keep the glaze evenly coating the sausages and to prevent sticking.
  5. Step 5: When done, stir gently one last time and transfer to a serving dish. Serve warm with toothpicks for easy snacking.

Notes

Use fresh brown sugar for best texture. Stir occasionally during cooking to avoid burning glaze. Substitute pineapple juice with orange or apple juice for a different fruity twist. Swap Lil' Smokies with mini kielbasa or cocktail sausages if desired. Add hot sauce or diced jalapeños to spice it up. Store leftovers in an airtight container in the fridge for up to 4 days; reheat gently with a splash of pineapple juice or water. Freeze cooked bites for up to 2 months.
