Ingredients
  

For the Pizza Stuffed Zucchini Boats
  • 4 medium zucchinis sliced in half lengthwise and seeds scooped out
  • 1 cup marinara sauce
  • 1 cup mozzarella cheese shredded
  • 1/2 cup pepperoni slices chopped
  • 1/2 cup bell pepper diced
  • 1/4 cup onion diced
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste
  • Fresh basil for garnish (optional)

Method
 

  1. Step 1: Preheat your oven to 375°F (190°C).
  2. Step 2: Slice each zucchini in half lengthwise and scoop out the seeds and flesh to create boats. Leave about 1/4 inch of zucchini on the sides.
  3. Step 3: In a mixing bowl, combine the marinara sauce, half of the mozzarella cheese, pepperoni, bell pepper, onion, Italian seasoning, garlic powder, salt, and pepper. Mix until well combined.
  4. Step 4: Fill each zucchini boat with the pizza mixture, pressing down gently to pack it in.
  5. Step 5: Place the stuffed zucchini boats on a baking sheet lined with parchment paper.
  6. Step 6: Sprinkle the remaining mozzarella cheese on top of each stuffed zucchini.
  7. Step 7: Bake in the preheated oven for 25-30 minutes, or until the zucchini is tender and the cheese is bubbly and golden.
  8. Step 8: Remove from the oven and let cool for a few minutes before garnishing with fresh basil, if desired.
  9. Step 9: Serve warm and enjoy your delicious pizza stuffed zucchini boats!

Notes

Store any uneaten Pizza Stuffed Zucchini Boats in an airtight container in the fridge for about 3-4 days. You can freeze them before baking as well.
