- Step 1: Preheat your oven to 375°F (190°C).
- Step 2: Slice each zucchini in half lengthwise and scoop out the seeds and flesh to create boats. Leave about 1/4 inch of zucchini on the sides.
- Step 3: In a mixing bowl, combine the marinara sauce, half of the mozzarella cheese, pepperoni, bell pepper, onion, Italian seasoning, garlic powder, salt, and pepper. Mix until well combined.
- Step 4: Fill each zucchini boat with the pizza mixture, pressing down gently to pack it in.
- Step 5: Place the stuffed zucchini boats on a baking sheet lined with parchment paper.
- Step 6: Sprinkle the remaining mozzarella cheese on top of each stuffed zucchini.
- Step 7: Bake in the preheated oven for 25-30 minutes, or until the zucchini is tender and the cheese is bubbly and golden.
- Step 8: Remove from the oven and let cool for a few minutes before garnishing with fresh basil, if desired.

Notes
Store any uneaten Pizza Stuffed Zucchini Boats in an airtight container in the fridge for about 3-4 days. You can freeze them before baking as well.
