Method
 

  1. Step 1: Preheat your oven to 350°F (175°C).
  2. Step 2: In a mixing bowl, combine the creamy peanut butter, granulated sugar, egg, vanilla extract, baking soda, and salt. Mix until well combined.
  3. Step 3: Scoop tablespoon-sized portions of the dough and roll them into balls. Place the dough balls on a baking sheet lined with parchment paper, spaced about 2 inches apart.
  4. Step 4: Gently press a miniature Reese's peanut butter cup into the center of each dough ball.
  5. Step 5: Bake in the preheated oven for 10-12 minutes, or until the edges are golden brown.
  6. Step 6: Remove from the oven and let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
