- First, you'll want to gently flatten each slice of bread using a rolling pin. Don't worry about making them perfectly flat; a little rustic charm is fine!
- Next, place a cooked sausage link on one end of each flattened bread slice.
- Now, tightly roll each slice around the sausage, creating a neat little roll-up.
- In a bowl, whisk together the eggs, milk, cinnamon, and vanilla extract. If you’re using sugar, add it now.
- Dip each roll-up into the egg mixture, making sure they're fully coated.
- Heat the butter or oil in a large skillet over medium heat. Carefully place the roll-ups in the skillet and cook for about 4-5 minutes per side, or until they're golden brown and heated through. You might need to cook them in batches, depending on the size of your pan.
- For extra sweetness and spice, toss the warm roll-ups in a mixture of cinnamon and sugar.
- Serve immediately and drizzle generously with maple syrup or honey.

Try using different types of bread, like challah or brioche. You could also add a sprinkle of chopped nuts or dried fruit to the egg mixture for extra texture and flavor.
