Ingredients
  

For the Sautéed Zucchini
  • 4 medium zucchinis sliced into half-moons
  • 2 tbsp olive oil
  • 3 cloves garlic minced
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp red pepper flakes optional
  • 1 tbsp fresh lemon juice
  • 2 tbsp fresh parsley chopped
  • Grated Parmesan cheese

Method
 

  1. Step 1: Wash the zucchinis thoroughly and slice them into half-moons about 1/4 inch thick.
  2. Step 2: In a large skillet, heat the olive oil over medium heat until shimmering.
  3. Step 3: Add the minced garlic to the skillet and sauté for about 30 seconds, until fragrant.
  4. Step 4: Add the sliced zucchini to the skillet. Sprinkle with salt, black pepper, and red pepper flakes if using. Sauté for about 5-7 minutes, stirring occasionally, until the zucchini is tender and lightly browned.
  5. Step 5: Remove the skillet from heat. Drizzle the sautéed zucchini with fresh lemon juice and toss in the chopped parsley.
  6. Step 6: Transfer the sautéed zucchini to a serving dish. If desired, sprinkle with grated Parmesan cheese before serving.

Notes

To store leftover sautéed zucchini, let it cool completely, then transfer it to an airtight container. It will keep in the refrigerator for about 3-4 days.
