- Step 1: In a large skillet, heat olive oil over medium-high heat. Add the diced chicken breast and season with salt, pepper, and 1 tablespoon of Cajun seasoning. Cook until browned and cooked through, about 5-7 minutes. Remove from the skillet and set aside.
- Step 2: In the same skillet, add the diced onion and bell pepper. Sauté for 3-4 minutes until softened. Add the minced garlic and cook for another minute until fragrant.
- Step 3: Add the long-grain rice to the skillet, stirring to combine with the vegetables. Pour in the chicken broth and bring to a boil. Reduce the heat to low, cover, and simmer for about 15 minutes or until the rice is cooked and the liquid is absorbed.
- Step 4: Once the rice is cooked, stir in the heavy cream, remaining Cajun seasoning, and grated Parmesan cheese. Mix until the cheese has melted and the sauce is creamy.
- Step 5: Return the cooked chicken to the skillet and gently stir to combine. Allow everything to heat through for another 2-3 minutes.
- Step 6: Remove from heat, garnish with chopped fresh parsley, and serve hot.
Notes
Store any leftovers in an airtight container in the refrigerator for up to 3 days. To reheat, simply warm it up in the microwave or on the stove, adding a splash of chicken broth to loosen up the sauce if needed.
