Ingredients
  

For the Cajun Chicken Rice Skillet
  • 1 lb chicken breast diced
  • 1 cup long-grain rice
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 1 cup Parmesan cheese grated
  • 1 medium onion diced
  • 3 cloves garlic minced
  • 1 bell pepper diced
  • 2 tbsp Cajun seasoning
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • Fresh parsley

Method
 

  1. Step 1: In a large skillet, heat olive oil over medium-high heat. Add the diced chicken breast and season with salt, pepper, and 1 tablespoon of Cajun seasoning. Cook until browned and cooked through, about 5-7 minutes. Remove from the skillet and set aside.
  2. Step 2: In the same skillet, add the diced onion and bell pepper. Sauté for 3-4 minutes until softened. Add the minced garlic and cook for another minute until fragrant.
  3. Step 3: Add the long-grain rice to the skillet, stirring to combine with the vegetables. Pour in the chicken broth and bring to a boil. Reduce the heat to low, cover, and simmer for about 15 minutes or until the rice is cooked and the liquid is absorbed.
  4. Step 4: Once the rice is cooked, stir in the heavy cream, remaining Cajun seasoning, and grated Parmesan cheese. Mix until the cheese has melted and the sauce is creamy.
  5. Step 5: Return the cooked chicken to the skillet and gently stir to combine. Allow everything to heat through for another 2-3 minutes.
  6. Step 6: Remove from heat, garnish with chopped fresh parsley, and serve hot.

Notes

Store any leftovers in an airtight container in the refrigerator for up to 3 days. To reheat, simply warm it up in the microwave or on the stove, adding a splash of chicken broth to loosen up the sauce if needed.
