  • 1 cup whipped cream for topping.

Equipment

  • 8x8-inch baking dish
  • Medium bowl
  • Mixing spoon

Method

  1. Step 1: Preheat your oven to 350°F (175°C). Line an 8x8 inch baking dish with parchment paper, leaving some overhang for easy removal later.
  2. Step 2: In a medium bowl, mix together the flour, sugar, baking powder, and salt until well combined.
  3. Step 3: In another bowl, combine the melted butter, egg, and vanilla extract. Stir until everything is mixed well.
  4. Step 4: Gradually add the wet mixture to the dry ingredients, mixing until just combined. Don't overmix; we want to keep those bars tender.
  5. Step 5: Gently fold in the chopped strawberries, being careful not to mash them.
  6. Step 6: Pour the batter into the prepared baking dish, spreading it evenly.
  7. Step 7: Bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean.
  8. Step 8: Let the bars cool completely in the baking dish.
  9. Step 9: Once cooled, lift the bars out using the parchment paper. Cut into squares and serve topped with whipped cream.
