- Step 1: Preheat your oven to 350°F (175°C). Line an 8x8 inch baking dish with parchment paper, leaving some overhang for easy removal later.
- Step 2: In a medium bowl, mix together the flour, sugar, baking powder, and salt until well combined.
- Step 3: In another bowl, combine the melted butter, egg, and vanilla extract. Stir until everything is mixed well.
- Step 4: Gradually add the wet mixture to the dry ingredients, mixing until just combined. Don't overmix; we want to keep those bars tender.
- Step 5: Gently fold in the chopped strawberries, being careful not to mash them.
- Step 6: Pour the batter into the prepared baking dish, spreading it evenly.
- Step 7: Bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean.
- Step 8: Let the bars cool completely in the baking dish.
- Step 9: Once cooled, lift the bars out using the parchment paper. Cut into squares and serve topped with whipped cream.
Notes
Store them in an airtight container at room temperature for up to 3 days. If you want to keep them longer, refrigerate them for up to a week.
