Summer Berry Jello Lasagna

Ingredients
  

For the Crust
  • 1.5 cups crushed graham crackers for the crust
  • 0.5 cup unsalted butter melted
  • 0.25 cup sugar for the crust
For the Cream Cheese Layer
  • 8 oz cream cheese softened
  • 1 cup powdered sugar for sweetening the cream cheese layer
  • 1 cup whipped topping for light, airy texture
For the Berry Layer
  • 2 cups mixed berries use strawberries, blueberries, and raspberries
  • 1 package berry-flavored gelatin 3 oz
  • 2 cups boiling water to dissolve the gelatin
  • 1 cup cold water to balance the temperature of the gelatin mixture
For Garnish
  • extra mixed berries for garnish
  • whipped topping for serving

Method
 

  1. Step 1: In a medium bowl, combine the crushed graham crackers, melted butter, and sugar. Mix until well combined and press firmly into the bottom of a 9x13 inch baking dish. Set aside.
  2. Step 2: In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth. Gradually add the powdered sugar and mix until well combined. Fold in the whipped topping until light and fluffy. Spread evenly over the graham cracker crust.
  3. Step 3: In a separate bowl, dissolve the berry-flavored gelatin in 2 cups of boiling water. Stir until completely dissolved. Add 1 cup of cold water and mix well. Allow to cool for a few minutes, then gently stir in the mixed berries.
  4. Step 4: Pour the berry mixture over the cream cheese layer, spreading it evenly. Refrigerate for at least 4 hours, or until the gelatin is set.
  5. Step 5: Once set, cut into squares and serve with extra whipped topping and fresh mixed berries on top.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. Add fresh whipped topping and berries before serving for a fresher taste!
