- Step 1: Start by washing the lemons thoroughly. Cut them into quarters and remove any seeds.
- Step 2: In a large pot, combine the lemon quarters, sugar, and water. Stir well to ensure the sugar starts dissolving.
- Step 3: Bring the mixture to a boil over medium heat, then reduce the heat and let it simmer for about 30-40 minutes, stirring occasionally.
- Step 4: Add in the freshly squeezed lemon juice and vanilla extract, if using. Simmer for an additional 10 minutes.
- Step 5: Remove the pot from heat and let it cool slightly. Transfer the jam to sterilized jars and seal them tightly.
- Step 6: Allow the jam to cool completely at room temperature before refrigerating.
